Nutritious Vegetable Tortilla (Low in Calories)

Instructions:

In a large bowl, beat the eggs with a little salt, pepper, and optional spices.

Add the chopped and grated vegetables to the eggs and mix well.

Heat the olive oil (or spray) in a non-stick skillet over medium heat.

Pour the mixture into the skillet and spread it evenly.

Cook for 4–5 minutes until the bottom is set and golden.

Carefully flip the tortilla (or cover with a lid to steam-cook) and cook another 3–4 minutes until firm and fully cooked.

Serve warm with a side salad or yogurt dip.

This tortilla is light, full of fiber and vitamins, and much lower in calories than a traditional potato tortilla.
